The cuisine of Miami is a reflection of its diverse population. With a heavy influence from Latin American culture, Peruvian cuisine, allows the restaurant, “Rojo y Blanco” to utilize locally sourced ingredients such as fish and fresh produce, to successfully create traditional Peruvian dishes. The concept, weaving, will be expressed through the overall floor plan layout and reflected ceiling plans. Customers and staff will be able to weave through the restaurant creating a sense of easy movement. In addition, the integration of certain materials and lighting will be selected to exhibit pattern and form. Rojo y Blanco is in the heart of Miami, Florida. The name translated in Spanish means “Red and White”, the two colours that are exhibited in the national flag of Peru.
